Hi everyone. Once again mother nature is trying to fool us! But to no avail. I have been seeing a lot of gardening preparation going on out there and boy are we all ready or what?
Doug and I have really started to get into the craze of cast iron cooking. We are slowly building our collection of various types of skillets and cookware. I have been amazed by how amazingly wonderful these are to cook with when seasoned correctly. Doug has spent many hours laboring over the pans to get them just right. So I am putting one of our first recipes in this week.
Yummy! This is a great recipe for when you have company coming over for breakfast and would work nicely at brunch. It is sure to impress everyone. And they never need to know it’s not that hard to make.
DUTCH BABY WITH
Cook time: 15 minutes; Prep time: 10 minutes; Serves: Six
3 large eggs
6 Tb. flour
6 Tb. milk
1 Tb. sugar
Pinch of nutmeg
1 Tb. regular vanilla
3 Tb. butter
1. PREHEAT OVEN: Preheat the oven to 425 degrees. Place three tablespoons of butter in the 10 inch frying pan to melt while it is preheating.
2. MIX INGREDIENTS: Combine all the remaining ingredients in a small mixing bowl and whisk until well mixed. With a pot holder, take the cast iron skillet out of the oven, (shut the door so you don’t lose your heat) and pour the batter into it, and return it to the oven to bake.
3. BAKE THE DUTCH BABY: Bake the Dutch Baby in the oven for 15 minutes. Watch it carefully as it browns so it doesn’t burn.
4. FILL THE DUTCH BABY WITH FRUIT: Fill with an assortment of fruit or berries. Squeeze the juice of one lemon over all fruit.
