Hi everyone. I hope all of you are enjoying the nice weather. Let’s hope it keeps going good for a long time. Just a few quick things to keep you updated. It’s also time for those yummy fresh salads to become part of your menu so here’s a quick one.
Tomato Cucumber Salad
16 oz. grape tomatoes
2 to 3 medium cucumbers or 2 large cucumbers
1/2 c. sliced white onion
2 Tb. Italian dressing
1 c.white vinegar
1/2 c. sugar
Slice cumbers into thin 1/4 inch slices. In a bowl mix together vinegar, sugar and Italian dressing. Add sliced cucumbers, tomatoes and sliced onions. Cover and allow the vegetable to marinate for about an hour before serving.
The Easter Supper last Sunday was a great success. They served more than 200 people. The food and company where as always, delightful. Easter egg sales were great but they will be selling them for a last time this Saturday and Sunday at the Exline store starting at 7 a.m. There are plenty left and they are getting together to make more baskets so you will have plenty of things to choose from with donations from the Royal Neighbors.
The Exline Betterment Committee will be holding it’s 4th of July kick off event Saturday at Morgan’s in Centerville with a bake sale to make money for our 4th of July celebrations here in Exline. As most of you know they throw a heck of a party here and it depends on donations from all sources possible. Last year the fireworks alone cost $6,000. So please come out and support Exline and get some of the tastiest baked goods around.
Royal Neighbors donated baked goods to the Americorps bake sale recently to help for the care of all of the animals that were taken out of the raid in Drakesville.
Maryann Hurley and her sister went to a seminar recently in Dubuque titled “What woman want.” I wish I could have been a fly on the wall for that one.
Finally, the Exline Permaculture Society will meet April 22 at 6:30 p.m. at the Exline Community Center for their first meeting of the year. If you are at all interested, please make sure you attend.
