Hello everybody. I would like to take the opportunity to thank everyone for their kind words and emails about my first article last week. Let’s hope I can keep it up.
Now that we are empty nesters we find ourselves often enjoying just a light meal of cheese and crackers and maybe a dip and chips for supper. Here is just a little quick dip for just such a night.
BLT Dip: A creamy dip flavored with bacon, lettuce and tomato
1 10 oz. can well drained tomatoes or small chopped fresh tomatoes
1 c. sour cream
3/4 c. mayonnaise
1 lb. bacon, cooked until crisp and then crumbled into small pieces
1 head of lettuce
Cracked black pepper
Cut the head of lettuce and hollow it out to make a bowl. Chop the lettuce you took out of the “bowl” finely and set aside. Mix the mayo, sour cream, crumbled bacon, tomatoes and 1 c. of the chopped lettuce. Taste and then add salt and several grinds of cracked black pepper as needed. Spoon into the lettuce bowl and refrigerate until serving. I would let this set to blend flavors for several hours if possible. Serve with baguette slices, crudités, chips, or a spoon. This is delicious and a fun way to fancy up finger food.
A few quick corrections on last week’s article — On May 4, the Royal Neighbors are planting container gardens for Join Hands Day and it was to be held at the community center, however, the location has been changed to the Hurley barn. It will still be held at 9 a.m. so don’t forget to join in getting those hands dirty for a cause. Royal Neighbors meet the second Monday of the month at 2 p.m. at the Community Center.
A correction for the time that the Recreation Committee meets the time is at 7 p.m. on the second Thursday of the month and not 6 p.m.
