Sample menu for weight loss offered

I thought this week I would share with you a day of the Curves Weight Management program. Many times I have been asked what types of foods can be eaten to lose weight. Following is a sample menu from our special weight-loss issue of the diane magazine.
Breakfast: One Curves cereal-apple-cran muffin and 1//4 cup egg substitute.
Snack: one mozzarella string cheese stick and 4 ounces of deli turkey breast.
Lunch: 6 ounces of peel-and-eat shrimp and a salad made from 3 cups of fresh spinach, 1/4 cup sliced red onion, 1/4 cup sliced fresh mushrooms, 10 baby carrots, one hard-boiled egg, sliced, and salad dressing with no more than 50 calories in the serving.
Dinner: 6 ounces broiled/grilled chicken breast with lemon pepper seasoning, 1/2 cup cooked broccoli and an apple.
This totals aabout 135 grams of protein, 100 grams of carbohydrates and 1,200 calories.
The Curves cereal-apple-cran muffin is delicious. I recently made them for my Sunday school class and they gobbled them up. I figure if they impressed 6 to 9 year olds, the recipe was a “keeper.” The best part is they only take about 10 minutes to whip up and 15-20 minutes to bake.
3/4 cup sweetened applesauce (I use just a little more)
1/2 cup skim milk
2 T canola oil
1 egg or 1/4 cup egg substitute
3 cups Curves Whole Grain Crunch cereal (or your favorite flake cereal)
1 1/4 cups whole wheat flour
1/2 cup packed brown sugar
1 t baking powder
1 t baking soda
1/2 cup sweetened dried cranberries
1/2 to 1 t granulated sugar
Preheat oven to 400 degrees F. Spray a 12-serving muffin tin with cooking spray.
In a large bowl, mix applesauce, milk, oil and egg until blended. Stir in cereal, flour, brown sugar, cinnamon, baking powder, baking soda and cranberries just until moistened. Divide batter evenly between muffin cups. Sprinkle tops with white sugar.
Bake 18 to 22 minutes or until golden brown. Be careful not to overbake.
Per muffin: 180 calories, 3 grams protein, 34 grams carbohydrates, 3 grams fat, 1 gram fiber.
