I hope everyone is enjoying the last days of summer. The Autumn season is fast approaching. It seems like the summertime just flew by.
The recipe for this week is one that, one of my cousins tried. She said it was really good.
Creamy Mashed Potatoes
2 sticks butter, softened, plus more for pan
5 lbs. russet potatoes
One 8 oz. package cream cheese, softened
1 c. heavy cream
1/2 to 1 tsp. seasoned salt
1/2 tsp. salt
1 tsp. black pepper
Preheat the oven to 350 degrees. Generously butter a 4-quart baking dish.
Peel and cut the potatoes into chunks. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until fork tender, 20 to 25 minutes.
Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape before adding in all the other ingredients.
Turn off the heat and add 1 1/2 sticks butter, the cream cheese, heavy cream, seasoned salt, salt and pepper. Mash to combine.
Spread the potatoes in the prepared baking dish. Throw pats of the remaining butter over the top of the potatoes and bake until the butter is melted and the potatoes are warmed through, 20 to 30 minutes.
Just recently, new carpet was installed in Exline City Hall and the interior of the community center building has been painted.
This past weekend, Denise and I were invited out to Rathbun Lake to join some friends for supper on Saturday evening.
Rick and Vickie Butler and their grandchildren, Wesley and Emily, along with Rhonda Sturms, her daughters Nicole and Allison and Rhonda’s aunt and uncle, Larry and Pat Sedgwick and their daughter Debi Roberts were all out there camping.
Ronda’s parents Gene and Connie Ruby were also out there, for the evening. So, there was 14 of us that ate together. They had delicious pork, ham and roast beef that had been slow roasting, most of the day.
Everyone made different things. I made potato salad and Denise made the Blueberry Crumb Cake that was the recipe in this article back on Friday, Aug. 12. It was a big hit. The meal was really good and everyone enjoyed visiting.
Later, we sat around the campfire and visted some more, as the kids roasted marshmallows. So, it was a nice evening.
Saturday evening was also the night of the Cowboy Ice Cream Social that was held at the community center. It was hosted by the Exline Royal Neighbors, Camp 3000
John Overgard and his helpers, made cobblers in Dutch Ovens over the open fires with hot coals, out behind the community center.
This event began at 5:30 p.m. and was well attended with over 100 people there.
They served homemade ice cream, cookie bars, cakes, pies and brownies, along with three different kinds of cobblers.
During the evening, Exline’s Mayor Jim Casteel, on behalf of the Exline City Council and the citizens of the town, presented a special plaque to life long resident, Bob Traxler, to honor, recognize and thank him for his time, talent and betterment of the community. His effort was also appreciated for constructing the community center. A special cake was also presented to honor him for this lifetime endeavor.
