Published May 01, 2008 10:11 am - Did you know there were several national days of prayer in the U.S. before the day was made official in 1952? The Continental Congress issued a day of prayer in 1775 to designate “a time for prayer in forming a new nation.” Today is 57th annual National Day of Prayer By Dorothy Haines - Exline correspondent I made these muffins one day last week and we decided this recipe was a keeper. I will tell you that I didn’t put the white chocolate chips in mine as I don’t like chocolate chips in my muffins. That’s a good enough reason, isn’t it? Banana Muffins 3 large ripe bananas 3/4 c sugar 1 egg 1/3 c oleo, melted 1 1/2 c flour 1/2 t salt 1 t baking powder 1 t baking soda 1 c white chocolate chips Mash the bananas. Add the sugar and the slightly beaten egg. Add melted oleo. Combine the dry ingredients and mix together. Add chips. Do not overbeat. Pour batter into muffin tin. Makes 12 muffins. Bake at 350 degrees for 20 minutes. First, since this is the first day of May, I want to wish each of you a very happy May Day. When I was teaching, sometimes we would make May baskets as an art project. It was always fun for the kids to have something to take home and surprise their parents.
